Vous aurez besoin de :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>400 grammes de riz rond typ\u00adique (riz bom\u00adba ou calas\u00adpar\u00adra), c\u00e9l\u00e8bre pour sa capac\u00adit\u00e9 \u00e0 absorber le bouil\u00adlon sans devenir p\u00e2teux.<\/li>\n\n\n\n<li>300 grammes de poulet fer\u00admi\u00ader, coup\u00e9 en morceaux.<\/li>\n\n\n\n<li>200 grammes de lapin (fac\u00adul\u00adtatif mais forte\u00adment recom\u00admand\u00e9).<\/li>\n\n\n\n<li>150 grammes de hari\u00adcots verts plats.<\/li>\n\n\n\n<li>100 grammes de gar\u00adrof\u00f3, un hari\u00adcot blanc local typ\u00adique de Valence.<\/li>\n\n\n\n<li>1 \u00e0 2 tomates m\u00fbres \u00e0 pointes, pel\u00e9es et r\u00e2p\u00e9es.<\/li>\n\n\n\n<li>1 poivron rouge fine\u00adment \u00e9minc\u00e9.<\/li>\n\n\n\n<li>1 oignon moyen, hach\u00e9.<\/li>\n\n\n\n<li>2 gouss\u00ades d\u2019ail fra\u00eech\u00ades, \u00e9cras\u00e9es.<\/li>\n\n\n\n<li>1 litre de bouil\u00adlon de volaille (fait mai\u00adson si pos\u00adsi\u00adble).<\/li>\n\n\n\n<li>Safran de qual\u00adit\u00e9 (quelques fil\u00ada\u00adments), ou \u00e0 d\u00e9faut, du papri\u00adka doux.<\/li>\n\n\n\n<li>Huile d\u2019o\u00adlive extra vierge.<\/li>\n\n\n\n<li>Sel et poivre du moulin.<\/li>\n<\/ul>\n\n\n\n<p>La qual\u00adit\u00e9 des ingr\u00e9\u00addi\u00adents garan\u00adtit la r\u00e9us\u00adsite gus\u00adta\u00adtive de la pa\u00ebl\u00adla, notam\u00adment le riz, qui doit \u00eatre sp\u00e9\u00adci\u00adfique et la viande fra\u00eeche.<\/p>\n\n\n\n<p><strong>\u00c9tapes de pr\u00e9\u00adpa\u00adra\u00adtion pour une pa\u00ebl\u00adla par\u00adfaite<\/strong><\/p>\n\n\n\n<p><strong>1. Pr\u00e9\u00adpa\u00adra\u00adtion du sofrito<\/strong><\/p>\n\n\n\n<p>Com\u00admencez par faire chauf\u00adfer l\u2019huile d\u2019o\u00adlive dans un grand po\u00eale \u00e0 pa\u00ebl\u00adla. Faites revenir l\u2019oignon et l\u2019ail jusqu\u2019\u00e0 ce qu\u2019ils devi\u00aden\u00adnent translu\u00adcides. Incor\u00adporez ensuite les tomates r\u00e2p\u00e9es et lais\u00adsez mijot\u00ader douce\u00adment, de mani\u00e8re \u00e0 obtenir un m\u00e9lange par\u00adfum\u00e9 et \u00e9pais appel\u00e9 \u00ab sofrito \u00bb. L\u2019a\u00adjout du riz et des \u00e9pices<\/strong><\/p>\n\n\n\n<p>Versez le riz uni\u00adfor\u00adm\u00e9\u00adment dans le po\u00eale et m\u00e9langez-le bien avec le sofrito, la viande et les l\u00e9gumes, de fa\u00e7on \u00e0 ce que chaque grain soit enrob\u00e9 de mati\u00e8res grass\u00ades pour une meilleure cuis\u00adson. Versez ensuite le bouil\u00adlon chaud dans le po\u00eale, infus\u00e9 avec les fil\u00ada\u00adments de safran ou le papri\u00adka.
